One of the most venerable temples of gastronomy not only in Bordeaux but all of France, Le Chapon Fin on Rue Montesquieu has been delighting diners since 1825 and annointed with a Michelin star since the early 20th century. Current chef Nicolas Frion carries on the tradition admirably with dishes such as pigeon with white beans and mushrooms and sea bass with liquorice butter, braised pumpkin, and turnips (it need not even be expensive; there's a 30-euro lunch prix-fixe). The 1901 interior design by Alfred Duprat mixes the classic with the surprising (such as an area that mimics a cavelike grotto).
