For a superb two-Michelin-star gourmet experience, it's worth a short detour to the outlying town of Bouliac, just 15 minutes out of Bordeaux, for a meal at Le Saint-James, in the hotel of the same name. Its dining room and garden terrace offering lovely views out over vineyards and countryside, the restaurant earns its stars with traditional products creatively transmogrified at the stoves overseen by chef Nicolas Magie (whose surname, interestingly enough, actually means "magic"). Some of the star dishes include blue Cotinière coast lobster roasted over wood; garlic-smoked snails with parseley; Aquitaine caviar with green apple sauce and barberry; wild turbot with cream of algae; and toasted Iberian pork on a bed of mushrooms and caramelised onions.
