One of the locals' favourite treats - especially during the heat of summer - is sitting down at a café to a nice plate of papas arrugás (Canarian dialect for "wrinkled potatoes). These little round spuds are boiled in salt water and eaten unpeeled with mojo picón, a slightly zingy dressing made with olive oil, vinegar, cumin, and garlic. And while many people do enjoy them on their own, papas arrugás are often also served as a side dish.
