A soft, strongly spiced pork sausage very characteristic of the Balearic Islands, sobrassada is the result of efforts to preserve foodstuffs dating back to the 14th century, of which Mallorca is rightly proud. Sobrassada is served in various forms all over the island, but one thing we'd recommend is to find a nice outdoor café near the Passeig Maritim and order a tapa portion together with a nice little glass of Palo de Mallorca liqueur.
