Right along the Moldau with lovely views of the Charles Bridge and the Prague Castle (hence the name Bellevue, yes?), this is widely considered the city's most refined restaurant of the moment, with creative international dishes such as fennel-dusted grilled monkfish, accompanied by chorizo-and-piquillo-peppers couscous, octopus, violet potatoes, in a light bouillabaisse, or Jerusalem artichoke risotto with winter vegetables, cooked in black-truffle nage.
