Though most visitors flock to the Dominican Republic for its shores, the heartland is a fascinating change of pace, as well. Costanza, in the jungle around the centre of the island at 1,220 metres (4,000 feet) above sea level is a good example of a farming/ranching town where the rhythms of rural Dominican life continue as they have for generation, mixing European, African, and even precolumbian traditions. Don't miss the local celery soup or giant strawberries, very typical of the area.
