In Israel, what to make of the food on your plate.
As you go sampling the city's edibles, Israeli cookery brings together influences from across the Middle East, Europe, and beyond. For starters, this land alone is a treasury of recipes of the civilisations which have occupied it over the millennia. For example, Turkish influence can be seen in the ubiquitous pita bread, falafel, shawarma, and hummus. Meanwhile, a strand of Iraqi (or, if you will, Mesopotamian) culinary DNA can be seen in the spicy mango chutney amba, as well as the sabich, a pita sandwich of fried eggplant and hard-boiled egg with hummus or tahini.
