Rice, rice, baby
This rice-based culinary cornucopia is of course not just Valencia's most famous dish, but also that of Spain as a whole. Taking its name from the huge metal pan in which it's prepared, paella comes in several varieties, but besides rice and water, ingredients of the original paella valenciana don't include langoustines and other seafood (that's another variety), but rather green beans, white beans, chicken, rabbit, tomatoes, olive oil, salt, and saffron. Unsurprisingly, you can find it all over town, and especially in the area around the Central Market as well as in the Carmen neighbourhood and other parts of the Old Town.
