The towns of Santa María de Guía, Moya and Gáldar to the north of the island kept a secret until recently, which is a culinary treasure that has turned into one of the most cherished symbols of Canarian cuisine. It's no wonder, and even though they decided to give its origin away, and explain the way in which the milk is curdled and the use of the thistle flower as the star ingredient, the popular flor de guía cheese is still inimitable and unique in the world; so much so that it enjoys its own certificate of origin. It's made by mixing sheep and cow's milk, it has a creamy texture inside and has a slightly sour taste. Unfortunately, it's not so easy to find throughout the whole year, as it's during the months of July and August when the thistle flower is in a suitable condition, but don't hesitate in tasting it if you have the opportunity. You'll want to taste it again.
