Algeria acts as a bridge between two very different culinary worlds, allowing it to combine the best of Mediterranean cuisine with the exquisite tradition of Arabic gastronomy. The result, as you can probably guess: marvellous. With the absence of pork for religious reasons, lamb has become the star ingredient in many national dishes. Not only eaten with couscous, it is also found in other typical dishes: lham liahlou, a delicious, slow-cooked lamb stew with cinnamon, plums and orange blossom water; chakhchoukha, where the lamb is mixed with bread, tomato, onion, chickpeas and other vegetables; or the well-known mechui, which is spit-roasted lamb. Trying at least one lamb dish during your time in Algiers is a must. Whichever you choose, you're in for a treat.
