An emblematic symbol
Despite first appearances, Algerian cuisine is very diverse and comprehensive, with a generous handful of elements that make it unique and extremely attractive. Dates have an important role to play and they are present in some of its most notable creations; so much so that Algeria has become the second largest exporter of dates in the world. There are many different varieties of date, but the date palm that produces the Deglet Nour date comes almost exclusively from the Algerian Sahara; it can also be found in other countries such as Tunisia, but is not as typical. Dates appears in many of the dishes that you will come across in Oran, being used for many diverse purposes, even in a bread called brissa (the softer date varieties are used in this), a wide range of puddings and, even, a date liqueur called thibarine. Incredible, isn’t it?
