Granada's very own mountain-cured ham
Located in the Alpujarras region near Granada, this small town of fewer than a thousand souls has made its name known throughout Spain and beyond thanks to its take on jamón serrano, ham of white pigs air-cured in the chill of the Sierra Nevada range. It's an ingredient in several local dishes as well, such as the stew known as habas a la granadina (broad beans, Granada-style). To take some of the ham home with you, the Charcutería Vallejo here in the town's Plaza de la Iglesia is a prime source (if on the other hand you'd rather pick it up in Granada itself, we'd recommend Jamones Sierra Nevada, which specialises in this as well as other sundry other varieties of jamón serrano).
