As an island, the life of Tenerife naturally has always revolved around the sea, with many of its cities and towns starting out as small fishing villages. The local cuisine revolves just as much around the sea's bounty, so an integral part of experiencing the Canary Islands to the fullest should involve sampling their maritime legacy on the plate as much as possible. That includes local specialities such as grouper, sea bass and porgy, whether grilled, marinated, salt-baked, whatever, often accompanied by the distinctive local "wrinkled" and other potatoes for which the Canaries are known.
