Your visit to Toulouse will not be complete unless you have visited this legendary central patisserie, probably the most famous in the city. Délices de Tunis does not sell French confectionary, but Arabic, an offering that will give an exotic touch to your visit: delicate mouthfuls with the characteristically intense flavour of honey, the gentle sweetness of marzipan, the sophisticated surprise of dates, or the famous ‘cornes de gazelles’, an almond pastry flavoured with cinnamon and orange blossom. As a bonus, Toulouse’s great central square also has the honour of hosting the famous Christmas Market every December, an event which is greatly anticipated the rest of the year. This is one of the most cherished events in the city, a typical meeting place for both little and ‘big’ children to enjoy the magic of Christmas while visiting the almost a hundred stalls selling handicrafts, Christmas decorations, traditional food and sweets and a multitude of ideas for that perfect present. It is a unique place to find a gorgeous souvenir of your visit to Toulouse. The splendid illumination in the Place du Capitole creates a magical atmosphere (beautiful Christmas lights are added to the usual lighting of the buildings), it is also a very special place to enjoy en famille. If you visit Toulouse at the end of the year, this is a place you must not miss.

With many faces
Welcome to a really eclectic market, with different faces depending on which day of the week you visit. There are few better places in Toulouse to organize an open-air shopping trip than the Place du Capitole, an enormous area which offers several different possibilities: on Tuesday and Saturdays there is an organic market where local farmers offer their best food products, such as fruit, eggs, meat and cheese, all produced organically. This is the oldest market in France, and has been operating for over thirty years. On Wednesdays it plays host to over eighty traders selling clothes, old books, jewellery, vinyl records, rugs and decorative items, among other interesting items. It is the perfect place to find that bargain you have been looking for; finally, every day except Monday it has flower stalls in the morning. There really is plenty of choice.

This is a bit smaller than the Victor Hugo Market, but it is no less charming. The Marché des Carmes is the favourite choice of many Toulousians to enjoy a quiet Sunday morning, as it is the perfect place to wander and soak up the fascinating atmosphere. There are more than fifty traders displaying their sought-after products, an ideal place to delight in the colours of the fresh fruit and vegetables, enjoy the aroma of freshly-cooked bread and the flavour of deliciously good meat. In fact, it is not unusual to see people eating sandwiches while they walk, as few can resist this great combination. The market is like a city in miniature. The cafes which surround it are very well-known and are frequented by a fascinating selection of people which gives the market a characteristically, all-pervasive, bohemian atmosphere.

One of its great attractions is the huge amount of reductions from coupons and vouchers, which are issued regularly and which give shoppers juicy percentage discounts. Another interesting fact? They have developed the system of Drive Shopping, a new form of shopping which allows you to order from the catalogue on the website and arrange a time and date to collect your purchase. This is one of the city’s most well-known and busiest shopping centres because of the variety of shops and the architecture of the building itself. Departmental Museum of the Resistance and Deportation
Review of the history of the city during the Nazi occupation.
A clear objective: to have memory
It is something that we should never forget, that is why spaces like this exist. The Toulouse Resistance Museum interprets the years of Nazi occupation during World War II, the persecution of the Jews and what life was like in the region during that time; it also shows stories of anonymous citizens who ended up becoming heroes thanks to their fight against terror. Symbolically, it was inaugurated in 1994, fifty years after the liberation of the city. The permanent collections explain how the resistance was and how the deportations to concentration camps were carried out, with a multitude of objects, photographs and testimonies that will make you reflect; because this is precisely what the museum pursues: teaching to have memory. It also functions as an important research center. The entrance is completely free, as well as the consultation of its bibliographic collection.

It was founded in 1796, but it was not until 1865 when it opened to the public in its current location. This Natural History Museum is the second largest in France, with six thousand square meters of exhibitions. Its interior houses an interesting collection made up of more than two million items, among which are replicas of dinosaur skeletons, hundreds of stuffed animals, fossils, insect assemblies and endless recreations that show how nature has evolved to the present day. days and how the human being coexists with the rest of the species that inhabit the planet. After a few years closed, it was completely renovated to become an interactive center since 2007, a feature that has given it even more interest and facilitates the understanding of the content on display. Its room, in which earthquakes are simulated, is especially striking. If you are traveling with children, it is an unbeatable option to enjoy a fun educational morning.

An ode to decorative art
Located in the central Hôtel Besson, an elegant XVIII century mansion, this centre is distinguished from other museums by exhibiting a beautiful collection of decorative and graphic arts that includes items from the Middle Ages right up to the present day. It was founded in 1949 by Paul Dupuy himself, a famous local collector. Inside you will have the privilege of admiring the incredible ‘Cabinet des object d’Art’ , which houses ceramics, suits and fabrics, gold work, glass, ivory (among these, the famous Roland’s Horn), furniture, more than six thousand stamps and drawings and an inexhaustible list of objects related to decorative art. What would be our highlight? Without a doubt, Edouard Gélis’ collection of watches, with over a hundred pieces, many of them several centuries old. It is a unique journey through history and visitors can see in these valuable object how tastes have changed over time.
Musée du Vieux Toulouse

A look at the past
Although this museum doesn’t usually appear in tourist guides, we highly recommend a visit: visitors end up leaving feeling very glad they came. The Museé de Vieux Toulouse is a sort of ethnological centre divided into themed rooms which house objects relating to the customs, the great traditions, the artistic life and the old institutions which held sway in the city, as well a look at some monuments that are no longer standing and the most important moments of their history. Everything is perfectly documented. A visit here is the best way of discovering what the city used to be like and how its eventful past has shaped it present-day personality. The museum has hundreds of old objects such as paintings, mosaics, canvases, suits and furniture which actively engage visitors in a truly fascinating experience. It was opened in 1948 in the beautiful XVI century mansion known as Hôtel Dumay, right in the city centre.

The centre of photography in Toulouse
This old nineteenth-century water tower, right on the banks of the Garonne River, has been converted into a beautiful gallery housing photographic exhibitions. It was created by the French artist Jean Dieuzaide in 1974 and, since then its fame has mushroomed until it has become one of the most visited centres in Toulouse. The remodelling project had the good taste to show respect for the original building and preserve some of the piping which formed part of the water tower, making an interesting contrast with its interior. The Château-d'Eau is the main site for photographic displays in the city, usually having a more avant-garde focus; the displays change regularly as part of a very interesting programme. It also has a large collection containing more than five thousand national and international photographic files. Impressive!
Goerges Labit Museum
Impressive overview of three thousand years of Asian and Egyptian art.
Exoticism is the order of the day
Architecturally, the Arabic-style exterior of the building already tells visitors that they are in the presence of a very exciting museum. Its collection is based on a very comprehensive display of exotic items originating from Asia and Egypt, many of them hundreds of years old. These are authentic relics. Georges Labit was an art collector in the XIX century who hoarded the many objects he collected during his travels, some of which are of incalculable value; he collected so many items that you will have the opportunity to take an unforgettable tour through more than three thousand years of art originating from Nepal, Japan, China and India; you will be amazed by such exclusive items as Chinese terracotta pieces, Samurai armour, Tibetan religious items, sarcophagi, Japanese theatre masks, statues of Buddha, and even an authentic burial chamber with mummies. The museum itself was founded in 1893.

Avant-garde and contemporary art
There is also a space in Toulouse for new avant-garde movements and more adventurous trends from contemporary art. Les Abattoirs has an exciting collection of modern art comprising more than two thousand words that focus on the movements arising during the second half of the XX century, including work from that time up to the present day: expressionism, abstract art, neo-expressionism, outsider art, the Parisian group COBRA and many art forms which fall outside the boundaries of traditional painting. Here you will have the opportunity to see works by great geniuses such as Morris, Dubuffet, Tapiès, Saura and Burri, as well as important temporary exhibitions which are often retrospectives of other great names from the world of art. This is also a very important centre for art restoration and research, and it has a conference room and a library. It also often organizes interesting arts workshops.

Interesting archaeological content
There was a time when the region of Toulouse was inhabited by Celts and Romans, and there was even a magnificent city of the old Roman Empire called Chiragan. This is the source of the majority of archaeological remains that can be seen in the Musée Saint-Raymond, also known as the Museum of Antiquities: this centre gives us an overview of that era, and explains what daily life was like at that time thanks to the exhibition comprising nearly a thousand pieces, among which are oil lamps, mosaics, jewellery, everyday utensils and decorative items, as well as an important collection of busts and sculptures representing emperors and famous figures. It is worth spending some time at the marble reliefs showing the labours of Hercules, which is truly magnificent. The basement houses the remains of a well-preserved necropolis where you will be able to take a close look at some sarcophagi.
The Bemberg Foundation
Works by Picasso, Gauguin, Tiziano, Bonard, Tintoretto, Lautrec... ¡A must!
Priceless
Situated in the beautiful building of Hôtel d'Assézat, this private museum houses the most important works collected by Georges Bemberg over his lifetime which he then donated to the city so that they could be seen by the public. It houses over a thousand sculptures, bronze statues, drawings and paintings, these latter being the star pieces in the centre. Its collection of pictures extends from the XV century to the XX century, and is laid out over two floors: the first has purely Renaissance works, and here you can see furniture of the time and works by geniuses such as Titian, Tintoretto, Cranach and Veronese; on the second floor, which focuses on modern and contemporary art, you will find pictures by Cézanne, Gaugin, Picasso, Monet, Matisse, Lautrec and Degas to name just a few. The Pierre Bonard retrospective is particularly interesting, with thirty or so paintings by the great French artist. A definite must during your stay in the city.

Cultural centre of Toulouse
This is, without a doubt, the most important museum in the city. Built on an old convent which was founded in the XIV century, it abandoned its religious symbolism during the French Revolution to become an impressive site for the immense artistic legacy contained in the abbey and in the public vaults: over four thousand works of art including paintings and sculptures to which other acquisitions have been added more recently. The result? A comprehensive journey from the Middle Ages up to the early years of the XX century, including works from different schools such as the Italian, French or Flemish. Pictures by Murillo, Rubens, Philippe de Champaigne, Tournier, El Perugino and sculptures by other artists such as Rodin and Falguière. The collection of terracotta figures from the XVI century and the many Romanesque capitals from other churches in the area are also remarkable.

From a different point of view
Boat trips are always a perfect way to get to know the city from a different perspective, an option which has many advantages; not only will you be able to see some of the city’s most characteristic buildings during a pleasurable journey, but you will also be seated comfortably on the deck of the boat with gentle breezes caressing your face. And also, of course, a guide will give visitors details of each place and share some less well-known known secrets as well. There are two types of boat trips you can book in Toulouse on the banks of the river: one goes mostly along the Canal de Brienne, the other goes along the Garonne. Both last for just over an hour. Our recommendation? Book the last available trip of the day, as you will be able to see a beautiful sunset and enjoy the night time illumination on the river. Spectacular!

No hills and good weather
Toulouse is an unbeatable city for travelling around by bike, as it is flat, has long bike routes and enjoys a pleasant temperature most of the year; it also has a large network of bike lanes which means you can move freely around the most well-known areas and also discover other places further away from the centre. Canals, parks, the banks of the Garonne River, bridges… seen from a totally different perspective. And the bike? Don’t worry, the city has Vélô Toulouse, a rental company where you can rent a bike for a day or a week: it has more than 250 centres around the city, something which will make travelling easy and which will allow you to travel at your own pace. Its prices are suitable for any budget and very reasonable. The first half an hour is free.
Japanese Garden

Something unexpected
It may seem strange to bump into a park like this in Toulouse, but it is its originality that gives the park its distinctive charm. The Japanese Garden is a green area of seven thousand square metres situated within the great Parque Compans Caffarelli, located in this district of the city. It is characterized by having the appearance of a Japanese park, with trees and shrubs shaped in Japanese style and with other elements typical of Japan, such as the iconic red wooden bridge which crosses the lake and a house with typically Japanese architecture. It was created in 1982, taking its inspiration from XV and XVI century gardens in Tokyo. It is not just its appearance which makes it noteworthy, but it is also home to several oriental botanical species which are a great contrast to the plants in the other parks in the city. It is a perfect place to wander peacefully and enjoy the silence.

The oldest park in Toulouse
Now we have arrived at the oldest public garden in the city which has been in existence since 1754. It was the first large green area opened in Toulouse for the enjoyment of the inhabitants, designed by the famous designer of the time, Louis de Mondran, following the ‘French garden’ prototype; both qualities helped it to become part of the select club of the Jardins Remarquables de France, a list which included the most beautiful gardens in the country. The Jardin Royal itself covers an area of 1.7 hectares and is home to some really exotic species which have contributed to the garden’s fame, such as the ginko biloba, magnolias, an African tuliptree, an Osage orange and Lebanon cedars. Its diversity is only matched by its originality. It also has a small lake which makes it even fresher, where ducks and elegant swans swim. This place is a must visit!
Jardin des Plantes
A perfect place to wander and disconnect from the hustle and bustle.
An oasis right in the city centre
This garden started life as a botanic garden but ended up as a large public park; however, it has still kept its previous appearance and has a diverse selection of plants, having over a hundred different species today. It was created in 1794. This is a green space covering seven hectares located right in the city centre, the green lungs of the city where you can wander, at your leisure and leave your worries behind, a perfect place to disconnect from the hustle and bustle: if you like reading surrounded by nature, then this is a true oasis. It is not only famous for its flora, but also for the quantity of animals which roam freely, such as ducks, tortoises and the squirrels which climb in the trees and which you can see close-up. It is a perfect option if you are travelling with children, as it has several attractions and playgrounds for them. It also has a large number of statutes and sculptures spread around the park.

With a unique circular design
This park is mainly famous for its surprising circular shape, and it is the only circular garden in the city. It was created in 1750 and, although not very large, it manages to accommodate a large number of attractions, making it a unique and different destination. You can walk around its famous central pavilion and along paths lined with huge trees, as well as truly stunning floral mosaics created with the highest attention to detail. It also has an exquisite central fountain and a large number of statues which pay tribute to local writers and represent mythological figures; the two sculptures which show a dog protecting her puppies from a wolf are also very striking. Another of its peculiarities is that it has two walkways which connect it with the Jardin des Plantes and the Jardin Royal. A truly productive use of a circle!
Canal de Brienne
Only 1.6 kilometres long, it is a favourite with Toulousians.
A beautiful natural waterway
If we had to choose one place to experience nature in all its glory, we would, without a doubt, choose this wonderful offering from Toulouse. The Canal de Brienne was created in 1776 to connect the Canal du Midi with the River Garonne, and since then it has become an attractive natural offshoot in the city, with unbeatable scenery. The leafy trees invite you to visit this place between the end of summer and the start of autumn, during the change in seasons, as this is a time of year when the yellow and orange hues appear in all their splendour to delight you with unsurpassed views. You will totally fall in love with the place. Its short length, only 1.6 kilometres, is the reason why so many Toulousians come here to walk, jog or cycle; also, of course, just to sit on the grass and enjoy the amazing scenery.

Toulouse's pride and joy
Did you know that the Atlantic Ocean and the Mediterranean Sea are linked by two canals which cross France? And Toulouse, thanks to its strategic position, is the point where the two canals meet: the Canal de Garonne which goes as far as Burdeos and the Canal du Midi which links the city to the Mare Nostrum. The latter was opened in 1681 and is the oldest navigable canal in Europe; it has even been designated as a World Heritage Site by UNESCO. Today, this waterway is a very popular destination for locals and tourists alike who take advantage of the spectacular scenery created on its banks to hike, ride bikes or skate. The banks are lined with huge plane trees which create generous areas of shade, making it a place of escape from routine for many locals, who come here daily to revel in its peace and silence. Its paths are easy to follow as they are clearly marked. It is an incredible place.

Romantic walk at nightfall
Walking along this promenade is one of those experiences that you have to live in Toulouse. The Quai de la Daurade will guide you along the entire bank of the Garonne until you reach the Pont Neuf, offering you some beautiful landscapes dotted with monuments and green areas on both sides of the river. It stands out for two very different aspects: on the one hand, for establishing itself as a particularly romantic place at nightfall, when the reddish sunsets manage to create an idyllic atmosphere together with the sound of water and the lighting of the buildings; on the other, because of the lively atmosphere that can be enjoyed here, since it houses an interesting variety of bars and terraces that are very frequented by the residents. In fact, it is the favorite place for students to chat happily while enjoying a good beer. And when the temperature accompanies, it will not be uncommon to see people having picnics in the open air. You'll love it!

Impressive mediaeval centre
During your stay in Toulouse you can definitely set aside a couple of days to escape from the city and discover other places away from the capital. If you have time, Albi would be your best option; this small city is located about seventy kilometres away from Toulouse, and is famous for its heritage trails, its monuments and for the characteristic red colour of its buildings. Walking around the historic quarter will take you back to the Middle Ages, thanks to a route full of historic buildings and hidden corners which exude mysticism. There are two points which you must not miss: firstly, the Cathedral of Sainte Cécile, a masterpiece of Gothic art which has a single nave which is totally painted, an unusual peculiarity. Its interior will astonish you; secondly, the museum of Toulouse-Lautrec, the city’s favourite son. This is located in a XIII century palace and houses around a thousand works by the great painter. It is well worth a visit.

Animaparc was opened in 2005 with a very simple aim: to allow the youngest children to have direct contact with nature while having an entertaining, fun-filled day; since then it has become a favourite destination for parents and children who want to enjoy a different kind of day out with their family. Throughout its fourteen hectares they will be able to see close-up more than two hundred animals, including peacocks, piglets, llamas, donkeys, ducks, goats and rabbits which they can feed. This natural area is perfectly complemented by other play areas with trampolines, ball ponds, inflatable castles, a pirate ship and even a water park. Families can also picnic there. A magical atmosphere

A cultural icon that has to be seen
This has been critically recognized to be the second most important theatre in France, only surpassed by the Ópera de Lyon. This is a forum inaugurated in 1818 where a great number of the best national and international artists from the world of ballet and opera have performed. It is a true symbol of Toulouse and one of the cultural centres par excellence in the city. The Théâtre du Capitole is situated within the Capitole de Toulouse and, following successive renovations, its facade combines elements of Neo-baroque and contemporary architecture. It has a seating capacity of almost 1,200, is the headquarters of the Orchestre National du Capitole de Toulouse, it has its own theatre company and has a carefully selected programme which includes operettas, recitals and famous dance shows. Also, every year it hosts an international singing competition.

No discussion of the city’s night life would be complete without mentioning Le Bikini, which is synonymous with partying, magic and an unbeatable atmosphere; all good Toulousians worth their salt have passed through its doors at least once in their lifetime. It is a legendary concert hall which has been hosting an average of two hundred shows a year for more than three decades, from a wide range of genres such as rock, pop, folk and electronic music. It is always packed to the rafters, helped by its wide and varied programme. An explosion in a neighbouring building in 2007 forced it to move from its original location; it is currently in the outskirts of the city, but it is easy to reach by metro. This change in location has brought with it a large terrace and an impressive swimming pool which gives the legendary concert hall an even more sophisticated atmosphere. During your stay in the city don’t even think about not visiting it: it is an absolute must.

A legendary university atmosphere
Toulouse is one of France’s university cities par excellence, and this fact becomes particularly noticeable (and how) over the weekend: the night life in Toulouse starts on Thursday and is truly lively, dynamic, and famous both for offering hundreds of opportunities as for the legendary parties which last through till morning. It has bars, like Chèz ta Mère, where you can enjoy a good glass of wine and live music; pubs, like London Town Pub which have a great atmosphere; live music venues like the Reggae Pub, with shows every Saturday; cocktail bars like the famous Moloki, where you can try some excellent cocktails; or gay-friendly discos such as Le Grand Cirque, a legend amongst legends. Let's conquer the universe!
Be prepared, because you have just arrived at an enormous theme park devoted to outer space. Cité de l’espace is a centre with an area of over two thousand square metres which looks at the history of the universe and everything related to the conquest of space, having on display replicas of space rockets, full-size international space stations and a collection of satellites. It is a completely interactive experience, visitors are able to train just like the astronauts do, use the Moon Runner to feel as if they are walking on the moon and even manage the launch of a shuttle. It also has interesting exhibitions about Mars and the big bang and two planetariums showing audio-visual displays. It is the perfect place to visit with a family: the youngsters will have fun, not only because of the large attractions, but also because a few years ago they created the Kids Space Base, designed totally for them.

An unforgettable experience
This is, without a doubt, the most important business in Toulouse on an international level. Airbus is one of the two large aeronautic companies in the world and its central headquarters, which are located in Toulouse, offer you the chance to take a look at the world of aviation from the inside. The company organizes guided tours of its facilities where you will be taken around the factory and the assembly line: the highpoint of the visit is going inside the hangar where they make the A300, the largest passenger plane at the present time: in the hangar, they explain where the parts come from, how the engines are assembled and the day-to-day operation. From a glass observation area, several metres high, you can see planes which are very nearly finished. It really is incredible! The only downside is that you are not allowed to take videos or photographs during the visit, but the experience is well worth it.

Are you ready for a different type of gastronomy? Les Mecs au Camion offers a rare culinary initiative that is both delicious and original: this is a food truck which follows a different route each day, so that you will never find it in the same place two days in a row. However, the majority of its stops are in the centre of Toulouse, so it shouldn’t be hard to track down. Its aim is to change the common culinary conception of fast food to show that it does not have to be incompatible with good quality: its menu includes hamburgers made with local meat which are cooked to order, and which, when combined with the homemade bread which is cooked daily, makes an enviable product. The bread and the burger are only the base, to which are added excellent cheeses, tasty sauces and other seasonings which you can choose to suit your taste. They also have vegetarian options.

Don’t be deceived by its name, this restaurant serves authentic French cuisine. The most remarkable thing about the place itself is perhaps its pleasant terrace where you can enjoy a meal in the open air and the classic red and white checked tablecloths that promise a good menu. The best quality of this restaurant is its value for money, with generous portions and top quality home-made dishes served impeccably, as the waiters are all very attentive. They speak several languages, English included, and can explain in detail how each dish is prepared. Its menu is limited to a few choices, such as steak tartare, duck fillet (tender meat cut into long strips), duck breast with potato gratin or ravioli salad. It is worth pointing out that is has a very good wine list. Whatever you order will be delicious.

Flavours from around the world
The chef here, Romain Brard, trained at some of the best restaurants in Tokyo and New York, which, added to his French culinary base, means that he has particularly wide gastronomic horizons. The result in Le Genty Magre is a menu which includes some very different dishes and has flavours from around the world, with original combinations and some very striking contrasts. As they assure us, they offer dishes prepared spontaneously. What will you find here? Duck pate with melon marmalade, veal tripe with tomato, salmon sashimi with coconut sauce or the restaurant’s own style cassoulet, the latter is particularly popular. The size of the dishes is generous, slightly larger than is the norm in this type of restaurant. It is not particularly cheap, but you definitely won’t be disappointed; its cosy atmosphere makes it the perfect choice for a romantic dinner.

An undiscovered treasure
If you want to enjoy a classy meal in a relaxed atmosphere, this is the place for you. Situated right in the centre of the city, it is a gem which has not yet been discovered by most tourists, although its excellent food will soon change that. Les Sales Gosses is a small restaurant which bases its menus (yes, it has more than one as it has one for lunch and another for dinner) on typically French cuisine, keeping the traditional flavour but reinventing the dish with a touch of sophistication; delicious recipes such as ravioli stuffed with pate, confit shoulder of lamb or tandoori monkfish fillet are presented differently, even audaciously. You will always have three or four choices from starter, main course and pudding, and it is possible to combine two or these courses or even order all three, depending on how hungry you are. Booking in advance is highly recommended.

The philosophy of le Point d’Ogre is also unique, as you only have to order the main course, which is usually based on duck or pork; the restaurant does the rest, for example, serving a fascinating basket as an aperitif which has vegetables, fruit, home-made cold meats and bread, to whet your appetite. For the most demanding palates
Southwest France, where Toulouse is situated, is well known for producing exquisite wines, among the best in the country. This magnificent production is due, not only to the enviable climate or soil quality where the vines are grown, but also to centuries and centuries of excellent practice in this sphere. In total, the area has 16 different designation of origins, which is an indication of the quality of its wines; just to mention a few, Fronton, Buzet, Gaillac and Madiran. It also has some specialities, such as the local négrette grape, which is only grown in this area in an extensive area dotted with wineries and castles creating an almost bucolic atmosphere. This area has also produced some top-quality liqueurs: the most well-known of these is probably Armagnac, a brandy which is obtained from the distillation of white wine, which is highly esteemed for its intense flavour.

The jewel in the crown
No-one is exactly certain where this recipe came from, but what is clear is that this dish is typical of the Languedoc region and, of course, of the city of Toulouse. It is no surprise that cassoulet is one of the city’s main culinary attractions. Cassoulet is a stew made with white beans and meat, either pork, or duck, always cooked slowly so it acquires its richness gradually. How it is prepared varies noticeably depending on who is cooking, but the most popular method is to use pork fat, pork rib and Toulouse sausage, with the addition of pork or duck confit according to which meat is being used. However it is cooked, the result is always spectacular. It name comes from the cooking vessel in which it is prepared, which is called a cassole. You will find cassoulet on nearly all Toulouse restaurant menus, even included in the traditional menu of the day.

If you thought that Germany had the patent on sausages, you will soon see that’s not the case. The famous Toulouse sausage has become a byword for this city’s gastronomy, having even crossed boundaries to become one of the most coveted products in the region; so much so that it even has its own designation of origin label. What is the secret? It’s very simple: top quality ingredients and a unique taste. This is a fresh sausage whose only ingredients are pork, water, salt and pepper, with the characteristic pink colour coming from animal intestines. It main characteristic lies in not being allowed to add colorants, additives or conservatives, so it is a completely natural product. It is usually eaten grilled, in a confit, or as part of a typical stew, another of the city’s star recipes. You will find these sausages in the markets displayed in a long rolled-up strings.
The Monument aux Morts
The reliefs on the frieze and the interior walls of the arch are particularly striking.
A tribute to those fallen in battle
It may be that patriotic pride is the characteristic which best defines the French personality, something which means that they have always treated soldiers who fell on the battlefield as heroes. The Monument aux Morts is a real reflection of this strength of feeling in Toulouse; it is an enormous arch inspired by Roman architecture which pays homage to local soldiers who fell in battle in the First and Second World Wars. Interestingly, it was inaugurated in 1928, so that references to soldiers in the Second World War were made by plaques and engravings which were added later. As well as its imposing size it is also notable for the reliefs on the inside made by Camille Raynaud, which display an allegorical personification of Victory, on one side, and a large crowd celebrating the end of the struggle, on the other. The figures on the frieze are also worthy of mention. This monument is often the site of emotional tributes.
Saint-Pierre Bridge and Catalan's Bridge
After Pont Neuf, these are the most famous walkways, each with a different style.
A walk over the river
Although Pont Neuf is the most famous bridge across the Garonne River, is not the only one, there are also other beautiful bridges linking the two sides of the city. Among the other bridges, two stand out: Saint-Pierre Bridge and Catalan’s Bridge. The first is famous for its metallic walkway and for the large number of very distinctive street lamps which look as if they have come straight from another century. It is 240 metres long and was originally built in the XIX century. However, damage caused by the rising river meant it had to be completely rebuilt in 1987 based on a metal structure. Interestingly, it is a favourite place for young people to meet at the weekend; the second bridge was opened in 1908 and owes its name to the historic friendship between the regions of Catalonia and Occitania. It is 257 metres long and has various arches built with the red bricks which are so typical of the city.
Pont Neuf
One of the most depicted places in the city, even more striking at night.
A landmark on the Garonne
This used to be the main entrance to the city so it’s not surprising that it is the oldest bridge in Toulouse (despite, curiously, its name meaning ‘New Bridge’). Pont Neuf is made of stone and brick and it took almost a century to build, with construction finally being completed in 1632. Architecturally of interest are its beak-shaped pillars which help to break up the water and the unconventional holes between the arches, which serve to withstand better the rising waters of the Garonne River. It is one of the landmarks of the capital and one of the most visited places, as the view of both shores from here is incredible. It is also one of the most depicted places, featuring on many postcards of Toulouse. Its night-time illumination makes it even more striking, as the water reflects the lights creating a scene of incomparable beauty… twice over!

The best thing? Its inner courtyard and its facades with Doric, Corinthian and Ionic columns.
A graphic display of harmony
An impressive XVI century building remarkable for its undisputable renaissance style; in fact, it was designed by Nicolas Bachelier, the most important architect of this period. Its inner courtyard, renovated in 1993, is a real gem: around it are graceful facades and windows created in different styles, structures which alternate between Doric, Ionic and Corinthian lines inspired by the Roman Coliseum. It is a graphic display of harmony. As a point of interest, it is said that this building could have been a lot larger if the neighbours had not refused to sell the land beside it. The Hôtel d'Assézat was privately owned until the beginning of the XX century, when the banker Théodore Ozenne donated it to the city. It was listed as a historic monument in 1914 and since 1944 has housed the attractive Bemberg Foundation Museum.
Place du Capitole
The city's nerve centre, a really lively square at any time of day.
Where everything starts and finishes
This is the perfect place to start your visit to Toulouse or to round off a long day of sightseeing. The Place du Capitole is the great nerve centre of the city, a place of extraordinary beauty where some of the city’s most important streets start. It is enormous and is surrounded by historic buildings and decorated by a huge Occitan cross on the ground, made by Raymond Moretti, representing the twelve hours of the day, the twelve months of the year and the twelve signs of the zodiac. This area is completely pedestrianized. Around the edge of the square there is a wide selection of shops, cafes and restaurants which have had to comply with several style rules just to be here, such as having their logos in brass; having a coffee or an aperitif on one of the terraces here is a real pleasure, especially at night, when the beautiful lighting gives the square a magical atmosphere. You will love it!
Capitole de Toulouse
Its beautiful neoclassical façade introduces a magnificent interior.
The site of the city hall
We have reached the most important civil monument in Toulouse: its city hall. This building was created in different periods and is the product of several structural changes; its splendid neoclassical façade was built in 1750, designed by the architect Gillaume Gammas. The Capitole owes its name to the people who ordered the original construction, the capitouls, members of the municipal council who are represented in allegorical form in the eight marble columns which are found on its main balcony. It is also possible to visit its enchanting interior, where you will find the famous Henri IV Courtyard, which houses an interesting collection of busts, and the Hall of the Illustrious, a room famous for the beauty of its frescos, painted by local artists throughout the XIX and XX centuries. It will take your breath away. It is located in the Place du Capitole itself, the central point of the city.
Jacobin Convent
Inside it houses the remains of Saint Thomas of Aquina and the famous 'palm tree'.
A building of contrasts
This old Dominican convent represents a masterpiece of Languedoc architecture, typical of this region of France. It was built between the XIII and XIV centuries, although significant restoration work had to be carried out throughout several decades of the XX century. There is a striking contrast between the thousands of red bricks of the exterior and the inner cloister, the centre of the building, which is formed of marble columns and capitals. What is most unique about this monument? Without a doubt, it is the famous vault which is 22 metres high and supported by a pillar with eleven arms which is known colloquially as ‘the Palm Tree’, because of its slender shape. It is spectacular. As a point of interest, the remains of Saint Thomas Aquinas are also here; they had to be transferred to the Basilica of San Sernin because of the French Revolution but were returned to the Jacobin Convent in 1974, on the seven hundredth anniversary of his death.
Basilica of Notre-Dame de la Daurade
This is the resting place of la Daurade, the patron saint of the city, highly revered by the locals.
Neoclassical church by the river
This is already a special because of its privileged position beside the River Garonne, but the Black Madonna which it houses makes it even more so. Known as la Daurade, because of the ancient golden mosaics which used to cover the church, she is a figure much-loved by Toulousians: and unsurprisingly, she is the city’s patron saint. The original icon was stolen, its first replacement was burned and the current figure was made in 1807 by John-Louis Ajon. She is venerated particularly by pregnant women, who come to her to ask for an easy birth and healthy babies. The building itself was constructed on an earlier church dedicated to the god Apollo which dates from the XVII century. Its neoclassical-style façade, with six gigantic columns a church with three naves characterized by a constant dim light, which lends a touch of mysticism to your visit. In the two lateral naves you will also find several chapels.
Basilica of St Sernin
Obligatory stop for pilgrims on the French Camino de Santiago.
The most visited temple in the city
Although it may appear otherwise, this is the most visited church in the city, receiving many more visitors than the cathedral itself. The Basilica of Saint Sernin is a genuine emblem of Toulouse, standing in its own right as the second oldest Romanesque temple in France. It is dedicated to San Saturnino, the first bishop of Toulouse in the III century. It is particularly significant because it is a place of pilgrimage, an obligatory stop for pilgrims on the Camino de Santiago in France, known as the Via Tolosana. It was built during the XII century. One of its most remarkable features is the octagonal bell tower which rises up from the building; it is 64 metres high and is divided into five levels and has a platform which accommodates twenty-four bells. Of particular significance is the well-known Porte Miègeville, which has several biblical iconographies and a series of sculptures which, historically, were thought to have an educational purpose.

Gothic, Romanesque and Baroque, all in the same building. Truly fascinating.
A symbol of eclecticism
This may be one of the most unusual temples you have ever visited. By unusual, we are referring to the unprecedented mixture of styles which can be seen at a simple glance, with overlapping Romanesque and Gothic elements, the fruit of unfinished projects which, over the years. were superseded by later remodelling. In fact the construction of Toulouse Cathedral took over three centuries to complete and was only finished in the XVII century. The result is a somewhat eclectic mixture, even in the colour of the stone which you can’t fail to notice. The tower which joins the facades is characterized by its asymmetrical design. Inside, of particular interest is the Baroque retable (yet another style to add to the list) made by Pierre Mercier in 1670 and the beautiful stained glass windows which allow the light to enter and give a touch of colour to the nave. The oldest windows date back to the XIV century.
